In my time here in the Philippines, I discovered that Gemütlichkeit has a twin in the concepts of pakikitungo and kagandahang-loob, the Filipino terms for hospitality and graciousness. In warmer weather, chilled appetizers may include a small salad of cubed watermelon with chunks of blue cheese and fresh herbs; cantaloupe or honeydew melon spears wrapped in prosciutto or Spanish ham; olives stuffed with red pepper, anchovy, or almond; cherry tomatoes or tiny red peppers stuffed with soft cheese whipped with herbs; or even Japanese or Lebanese cucumbers, sectioned and filled with a well-seasoned chicken or tuna salad.
